Matching local food with wines

If you have an important dinner don’t lose sleep over matching the food with wines and stick to the first rule                “drink what you like” even if the pairing isn’t perfect, you’ll still enjoy what you’re drinking.

When you match food and wines try to apply the following systems in identifying the strongest flavor in the dish, which in most cases it may be the sauce and look for a wine   which taste similar or completely in contrast.

Harmony Matching: Look for a wine which taste similar (for example if you have a dish with a creamy sauce which mostly taste sweet and fat match it with a creamy, fatty wine)

Contrast Matching: Look for a wine which is completely in contrast (for example you have a dish which has a bitter tendency you will match it with a wine with slightly sweet.)

When you will find that you can taste the food flavors and the wine flavors without any flavor overwhelming   the other you will have the food and wine matching.
